Five hundred kilos per arm is the number that matters here. Long stock is heavy and it all lands on the arms, so arm rating is the spec to compare rather than overall capacity. Arms sit at 250mm centres, which gives you enough levels to separate sizes without the rack becoming a wall of steel.

Single or double sided. Double sided against nothing, in the middle of a workshop, gives you twice the storage in roughly the same floor area. Single sided goes against a wall.

The units can be drilled for floor fixing, and on a rack holding long bar I would always do it. Load heavy material at the base and keep the top levels for light stock. A tall rack loaded top-heavy with steel bar is a genuinely dangerous thing.

Single or double sided?

Double sided belongs in the middle of a floor and gives you two faces for not much more footprint, so it is the better value per metre of storage. Single sided goes against a wall where double would waste a face. Work out where the rack is going first, then pick.

Why load heavy material at the base?

Centre of gravity. A cantilever rack loaded heavy at the top will go over, particularly while stock is being pulled from one side. Heavy at the base, light at the top, and bolt it to the floor. This is the single most common way bar racks cause injuries.
